Our region was hit by a decent snowstorm yesterday and so we made the decision that we just weren’t up for getting up and out the door before 8am to head to the oldest’s ringette practice. Maybe we would have, but the practice was in an arena over an hour away, and we foolishly have not put the snow tires on our van yet. Whoops! I don’t know about you, but on a snowy Saturday staying safe and eating a big beautiful breakfast feels like a better way to start the day. As much as I love ringette, sorry I’m not sorry we missed it today. 🙂
Looks gross out right?! Well, technically I took that picture yesterday afternoon, but it snowed even more after.
Anyway, after staying in bed unusually late, like until 8am, we decided to forgo our usual morning workout and get straight to cooking! A quick discussion of the options lead to me feeling it was time to find a healthy waffle recipe! Google never let’s me down, a search for “healthy waffles” yielded a great possibility; Whole Wheat Waffles! My take on it can be found below. But first, look how tasty they look, even in my low-quality iPhone picture!

As promised, the recipe!
Whole Wheat Waffles
Serves 4-5
Ingredients:
- 1 1/2 cups whole wheat flour
- 2 tsp baking powder
- 1/2 to 1 tsp of cinnamon
- 1/8 tsp salt
- 1 3/4 cups of any type of milk (I used unsweetened vanilla almond milk)
- 1/4 cup oil
- 2 eggs
- 1 tbsp honey
- 1/4 tsp baking soda (to cut down the honey’s acidity I assume)
- a splash of vanilla (because in my world everything sweet needs a bit of vanilla)
- Warm your waffle iron.
- In a large bowl combine flour, baking powder, cinnamon and salt.
- Combine milk, oil, honey, and baking soda into a glass measuring cup or medium sized bowl. Crack the eggs into a small bowl and whisk them a bit, then add them to the other wet ingredients.
- Add the wet ingredients to the dry and mix well.
- Cook the waffles in your iron according to the manufacturers instructions; mine took less than 5 minutes each.
- Enjoy with your favourite toppings.

We also made a few modifications to the sauce recipe. For one, we used frozen strawberries not raspberries. Then, Dylan decided to add apple, which was suuuuch a good idea! So without further ado or storytelling, here’s our strawberry/apple sauce!

Well, again I lacked the ambition needed to grab my real camera, so the picture does not do it justice. But that’s okay, you can either take my word for it, or try it yourself!
Strawberry/Apple Sauce
- 1 1/2 cups frozen strawberries (whole or cut smaller)
- 1/2 cup apple cut into small pieces (this is about half of a regular apple. We didn’t peel it, but you can if you’d like)
- 2 tbsp honey
- 2 tsp lemon juice
- Place all ingredients in a small saucepan and simmer until thickened. It may be helpful to mash the strawberries smaller as they cook if you’d like it to be more sauce-like.
This recipe works great with raspberries and mixed frozen berries as well. Really, it would probably work with most frozen fruit, but don’t quote me on that.
Sound good? Or not? Well, the waffles and sauce were actually great! This is another one of those lovely recipes I’ve found where I actually prefer the healthy version to the original! No kidding! Maybe I am just one of those people though. I mean, from a young age I’ve preferred brown bread to white.
But all the kids, and even the baby, loved them too!

Funny little bonus story, when I made this recipe I didn’t notice the “serving size.” Part way through cooking them I thought I had better make another batch, because my kids can put the waffles back! Well, each batch made about 9 waffles in my iron (just a square, regular one), and my second oldest wasn’t home so I now a full batch of waffles in a storage bag in the fridge. They may make it into the freezer yet, I guess I overestimated our appetites! I don’t really think anyone will complain that they can have a waffle quickly though, right? And I like that a quick waffle isn’t of the pre-packaged chemical-filled variety. Win-win, right?
For those who prefer syrup, but do not like maple syrup, I also made some homemade syrup this morning. Although I used real sugar in it, I figure it’s still healthier than store bought with all it’s extra ingredients. Today I did try and substitute honey for some of the brown sugar but wasn’t thrilled with the result, so I won’t bother sharing what I did. To keep us from over-indulging on the delicious-ness that is waffles we also had some scrambled eggs full of veggies, and a couple of slices of bacon (not turkey bacon today though, whoops).

**On a side-note, for any of you 21 Day Fix-ers out there, I wouldn’t feel too guilty counting one waffle from a standard waffle maker as 1 yellow, and using about 1/4 cup of fruit sauce on that waffle, counted as a 1/2 of a purple. I would say 1/4 cup of sauce is a half a serving of fruit because it would be a bit more concentrated (ie. more calorie dense) so you’re probably getting 1/2 a serving of fruit per 1/4 cup).
