Hello again! I’ve decided to STOP re-inventing the wheel! There are so many great blog posts out there with healthy recipes I’ve tried and loved. Rather than re-writing them all with my minor edits I’ve decided to make a post with links to the ones I’ve enjoyed, with brief notes about the changes (if any) that I’ve made. Then I can share more great recipes with you faster, and spend more time writing more unique and personal posts, and recipes that I have either invented completely or dramatically changed from the original.

Fresh Salsa

This recipe has no cilantro, because I had no cilantro that day and I wanted to make some fresh salsa. The amount of oil called for in this recipe is not needed. I would likely try it without any oil first and add a bit if needed.
Homemade Taco Seasoning

This is a go to for me, a tasty taco seasoning that’s not high in sodium, though I’m sure you could cut the salt it calls for and it would still be great. I also find it easier and more cost-effective to keep ingredients on hand to make things myself rather than stocking a bunch of specialty spice blends. But maybe it’s just me.

I actually don’t think I have tried this recipe myself, but thought I’d include it for future reference. I usually just take my favourite traditional pancake recipe and substitute whole wheat flour for the all-purpose flour, and use healthier oil choices when I want to make the kids some pancakes.

French Toast

This version of french toast is a little higher protein (read: 1 egg per slice of toast), so I find that makes it a little more satisfying than regular french toast.

Broccoli Cheddar Soup
This is soooo good! So good! Who needs cream for a delicious broccoli soup? It appears I need to step up my photo-game a bit but I truly love this soup! For a healthier take on tuna salad use plain yogurt instead of mayo, and add spices (like garlic, onion, pepper, and dill) to boost the flavour!

I think the only real change I made was I didn’t add sour cream. I didn’t think it was needed, and if you would like to add a little creaminess I would add a dollop of plain yogurt instead. I can’t believe I don’t have a picture of this soup! I guess I will have to make it again so I can upload a pretty image!
Vegetables & Complete Meals
One of the biggest keys to eating healthier is not only being careful to not overdo carbs (in particular sugar), but also making sure you are getting enough veggies in. Here are a few tried and tested, delicious ways to do just that.
Garlic Margherita Chicken & Zucchini
I don’t remember if I modified this or not (well, I certainly used olive oil instead of avocado oil), but I remember it was delicious! I love zucchini so one thing I’ve desperately searched for this summer and fall is recipes with zucchini that Dylan (not typically a zucchini fan) enjoys. Jackpot!
Cauliflower Beef Curry
I can’t believe I almost forgot to share this wonderful recipe! I can’t remember if I modified it at all, but I do remember it being a hit! Dylan loved it, and even the kids enjoyed it.

I did this in the summer so I don’t remember if I modified it, but I do remember cooking it on my pizza pan that is designed for the grill. I love, love, LOVED this pizza! But who wouldn’t, it’s an absolute thing of beauty, isn’t it?

Shepherd’s Pie with Cauliflower Mash

Okay, this has become like, a staple in our house! Guilt-free comfort food?! Yes please! Again I don’t seem to have a picture of this to share, sorry about that. It basically looks like Shepherd’s Pie, but the mash is not potatoes. ***One modification: I found the recipe calls for a little too much garlic in the cauliflower mash. I wonder if they actually meant 1tsp not 1tbsp. Anyway, exercise caution at that step!

Broccoli Tots

I’ve only made these once, but ever since then my oldest has been obsessed! Whenever I buy a large amount of broccoli, or take broccoli out of the fridge while prepping for supper she exclaims “broccoli tater tots?!” So you could say this recipe, while a bit time-intensive, is kid-approved.
Zucchini Pie
When I made this I omitted the corn and added other veggies like peppers. I found this to be so yummy!
Stuffed Zucchini

I mostly used this recipe as a guideline for about how long I would need to cook the zucchini, because I did not use the same type of “stuffing” they did. I fried ground beef, and used crushed tomatoes and tomato sauce that I spiced myself rather than pre-made spaghetti sauce. I also did not use 3 small zucchini but rather one large one that I hollowed out. Not that whole behemoth pictured above, he made several meals and cakes!

Pre-21 Day Fix we loved these as a little snack. We also have made them using the “21 Day Fix” spice mixes, which cuts the salt significantly.

This had to be the first dessert recipe I shared, because this is the first one I tried on the 21 Day Fix! I was looking for a treat to make for Dylan for Father’s Day, which was less than 1 week into our first round of the fix. We were still trying to stick to the plan as close as we could so I loved that this was tasty and didn’t use up any pf my precious yellow containers.

This works perfectly with any of your favourite frozen fruit. Pictured above is triple berry. Add a shake of cinnamon or 1-2tsp of honey if you aren’t yet used to sugar-free dessert. Super yum!
We also enjoy thawing the berries and eating them with plain yogurt. Again, add a little cinnamon, honey, or even maple if needed.

WARNING: This is a game changer! I dare you to make this just once, for real! It’s also quite easy to increase or decrease the servings, as presented it calls it 4 servings. I usually modify it into 2 servings but to me that means 2 bananas and a decreased amount of everything else, if you follow me. I also often add a little plain cocoa because I’m crazy like that.

This is a little different than traditional frosting, but I found it was a nice treat that satisfied the craving for sweets when I used it on a healthy brownie. The brownie itself was a little disappointing so I won’t waste your time by sharing what I did!

21 Day Fix Snack Ideas (Read: healthier snacking options)
To all of you who have hung in here this long, thanks! Sorry I don’t have more treat/dessert recipes to share. It looks like most of what I’ve baked since I started on this healthy journey were modifications from my favourite recipes. But hang in there, I will share those as soon as I can. I also just came up with a pretty tasty muffin recipe that is all my own, which I hope to share with you here soon!
